Meat and potatoes can be a heavy meal and often times are consumed in large portion sizes and significantly interfere with your fitness goals. Next time you are craving some meat and potatoes try this dish. The potatoes are crunchy and taste similar to French Fries except you don’t have the grease and fat which pair well with the side of asparagus for the veg. If you are craving beef go for a cut that is lean and have just a very small piece. In this photo to the left there is a mix of 3 very small pieces of beef and 2 pieces of eggplant. Skipping the steak sauce on the beef also helps to keep the meal leaner. I also have a few pieces of eggplant in the dish which have a hint of balsamic vinaigrette on them. I am incorporating both the beef and eggplant into this dish so that if you are vegetarian you can substitute the beef for eggplant, so on and so forth.
Ingredients: a few ounces of beef, one eggplant, 4 small organic white potatoes, 1 bunch of asparagus, black pepper, red pepper, garlic powder, onion seasonings, olive oil, balsamic vinaigrette.
Recipe: Heat oven to 350 degrees. Cut potatoes and asparagus into little slices and season them with one tablespoon of olive oil, black pepper, red pepper, garlic powder, and onion seasonings. Cut the eggplant up into little slices and drizzle a little bit of organic balsamic vinaigrette on it. Roast the veggies and potatoes in the oven at 350 degrees for 20-30 minutes depending on how crunchy you want them to be. Cook the pieces of beef on the grill adding black pepper, red pepper, garlic powder, and onion seasonings to flavor the meat. Enjoy the meat and potato dish without all the greasy fat, preservatives, and butter that you typically expect from this meal.
