Pasta is a favorite dish for many people but typically what comes to mind is a plate of pasta drenched in tomato sauce with ground beef, meatballs, or sausage or a cream sauce full of cheese or the scampi style where you have a bowl of oil with a bit of pasta in it. Add to that the fact that today’s portion of a pasta dish is more carbohydrates than a runner needs to carb load one or two nights before a marathon.
Pasta can make for a healthy family dinner if you substitute meat and cheese with veggies and an emphasis for moderation. I haven’t had pasta in a while so decided to whip up this quick meal after work which can be a delicious and healthy recipe for your family.
Ingredients: 1 bag of organic spinach, 1 bunch of Kale, 1 red Pepper, 1/2 pound of Chicken tenders, 1/2 box of wheat pasta, feta cheese, olive oil, garlic powder, red pepper, black pepper, and onion seasonings. Total prep time: 10 minutes. Total cook time: 10 minutes.
Cut up the kale, spinach, and chicken into pieces. Sauté the Kale, Spinach, red pepper, and chicken in a pan with 1 tablespoon of olive oil and the seasonings mentioned above. Boil 1/2 box of wheat pasta. Mix the pasta, veggies, and chicken and add one tablespoon of feta cheese. If the pasta is not seasoned enough for you, then add a little bit of olive oil to the pasta.
