Ingredients: 3/4 pound ground turkey, 1 egg white, 1/2 cup oatmeal, 1/8 cup breadcrumbs, 1 tablespoon barbecue sauce, 1/8 cup soy milk, black pepper, red pepper, garlic powder, onion seasonings. 4-6 red peppers depending on size of peppers.
Tonight on the blog I’m featuring K’s stuffed pepper. In the photo above you will notice that the pepper is stuffed with ground beef which is because my other half is getting sick of eating veggies and ground turkey everyday. The ground turkey is a healthier recipe but if you don’t like ground turkey then you can substitute ground beef as an alternative. I am also proposing two options for the barbecue sauce. The Walden Farms choice is calorie free if your fitness plan requires you to restrict calories. On the other hand I am an everything in moderation person when it comes to nutrition so as an alternative I propose the Sweet Baby Rays honey BBQ.
Heat oven to 350 degrees. Mix all ingredients together into a mixing bowl. Cut top of the red peppers off. Stuff the pepper with the mixture and place the top of the red pepper back on. Cook in the oven for 30 minutes.
